Ferrel’s Hurricane

I’ve always been a weather geek. So it was only natural that I joined The Weather Company to direct its advertising technology practice a few years ago. Every time a land-falling hurricane heads to the U.S., it’s all hands on deck to fulfill our mission keeping people out of harm’s way. After some of these storms, I would turn to this New Orleans classic. Here’s the best variant I’ve found to date, created by Ferrel Dugas, (former) Bar Chef at Commander’s Palace, New Orleans. The drink’s secret ingredient is fassionola syrup, a key to tiki classics like the Hurricane and the Cobra’s Fang. I’m aware of only one commercial source, and it’s only made in a limited run once a year when Louisiana strawberries are in season. It includes strawberries from Ponchatoula, LA, fresh pineapple, mango, passionfruit, lime peels, and hibiscus flowers.

  • 3/4 oz Plantation Fiji Estate Rum
  • 3/4 oz Havana Club White Rum
  • 1/2 oz Galliano Liqueur
  • 1 oz Cocktail & Sons Fassionola Syrup
  • 3/4 oz Fresh Squeezed Lemon Juice
  • 3/4 oz Fresh Squeezed Lime Juice
  • 8 drops Angostura or Bittercube Jamaican #1
  • Add all the ingredients to a shaker and add a half- handful of crushed ice.
  • Whip-shake until ice is dissolved and strain into a tall glass filled with fresh pebble or crushed ice.
  • Garnish with an inside-out cocktail umbrella, a pineapple wedge, cherries and a dusting of grated nutmeg.

This is major departure from the original components of it’s origin recipe the Last Word, this cocktial created by Justin Burrow of the Anvil and Refuge bar in Houston, TX. Batavia Arrack, a proto-rum spirit stands out in this mix, combining carribean spices coming from Velvet Falernum with the softer herbal notes of Yellow (v. Green) Chartreuse.

  • Place ingredients in shaking tin, add ice, shake for 15 seconds.
  • Double-strain into a chilled coupe glass.
  • Garnish with lime twist.

This drink comes from Kirkland Tap in Sommerville, Massachusetts. The original calls for Cocchi Americano Rosa, but is equally delicious using other vermouths, like Carpano Antica or Lillet Blanc.

  • 1 1/2 oz Tequila Blanco
  • 1/4 oz Carpano Antica Sweet Vermouth or Lillet Blanc or Coccchi Rosa
  • 1/2 oz Peach Liqueur
  • 1/2 oz Fresh Squeezed Lemon Juice
  • 1/4 oz Agave Syrup
  • Combine all the ingredients in a shaker with ice.
  • Shake until chilled.
  • Double-strain into a chilled coupe.
  • Express oils from twist, rub along glass rim and garnish.

Captain’s Grog

Born in the 1930s, the tiki movement contributed amazing creations to the craft of mixology. The challenge we face today is in recognizing that tiki’s positive contributions are often overshadowed by the misuse of religious symbolism, ignorance of indigenous people, and a generally colonialist view of the entire Pacific Rim. Recent movements like “Doom Tiki” that replace exploitative imagery with death-metal, rockabilly or even just sci-fi themes are early steps toward fixing what’s broken. Captain’s Grog

  • 3/4 oz Gosling Black Rum
  • 3/4 oz Plantation 3-Stars White Rum
  • 3/4 oz Chairman’s Reserve Forgotten Cask
  • 1/2 oz Orange Curaçao
  • 1/2 oz Velvet Falernum
  • 1/2 oz Fresh Squeezed Lime Juice
  • 1/2 oz Fresh Squeezed Grapefruit Juice
  • 1/2 oz Maple Syrup or Honey Syrup
  • 3 drops Vanilla Extract
  • 3 drops Almond Extract
  • 1 oz Club Soda
  • To make Captain’s Grog, combine all ingredients, except mint, with 12 ounces crushed ice into a mixing tin.
  • Whip shake briefly and pour into a chilled tiki mug or double old-fashioned glass.
  • Top with more crushed ice.
  • Garnish with mint, umbrella, and reusable straw.
