Here’s an herbal Mai Tai on steroids. This tiki drink has so many things going on that add up to more than the sum of its parts.

  • 1 oz Smith & Cross Jamaican Rum
  • 1/2 oz Green Chartreuse
  • 1/2 oz John D. Taylor Velvet Falernum
  • 1/2 oz Pierre Ferrand Dry Orange Curaçao
  • 1/2 oz Orgeat
  • 1 oz Fresh Squeezed Lime Juice
  • Add all ingredients to shaker.
  • Add ice, shake about 15 seconds.
  • Double-strain over fresh ice in a double old-fashioned glass.
  • Garnish with slapped mint sprig.
  • Citrus Press

For this drink from the Death & Company bars, I used one of my absolute favorite rums, St. Lucia’s Chairman’s Reserve Forgotten Casks aged rum. It’s a great sipper and mixer.

  • 1 oz Chairman’s Reserve Forgotten Casks
  • 1 oz Pierre Ferrand 1840 Cognac
  • 3/4 oz Pierre Ferrand Dry Orange Curaçao
  • 3/4 oz Fresh Squeezed Lemon Juice
  • 1 tsp Demerara Gomme Syrup
  • Combine all ingredients in shaker.
  • Add ice to tin and shake for 15 seconds until well diluted.
  • Double-strain into a chilled coupe glass.
  • Carefully hold peel over drink, ignite lighter and express oils through flame.
  • Garnish.

This tasty tiki drink comes from Latitude 29, a popular tiki joint in New Orleans. It starts with a mix of rums, adds spice and vanilla from the Spanish Licor 43 and is rounded out with three different juices.

  • 1 1/2 oz Plantation 3-Stars White Rum
  • 1 1/4 oz Lemon Hart 151 Overproof Dark Rum
  • 3/4 oz Licor 43
  • 3/4 oz Passion Fruit Juice

  • 3/4 oz Fresh Squeezed Lemon Juice
  • Combine all the ingredients in a shaker with ice.
  • Shake until chilled.
  • Strain over fresh ice in a tiki mug or tall glass.

Artichoke Hold

This is a bitter take on the Mai Tai. The drink combines three key ingredients for balance: Cynar, an artichoke-based Italian amaro, funky overproof Smith & Cross Jamaican rum, and bartender’s ketchup (aka St-Germain) to make a very balanced bittersweet version of the classic.

  • 3/4 oz Smith & Cross Overproof Rum
  • 3/4 oz Cynar Plus 1/4 oz For Garnish
  • 1/2 oz St-Germain
  • 3/4 oz Fresh Squeezed Lime Juice
  • 1/2 oz Orgeat Syrup
  • Mint sprigs as garnish Add all ingredients to a shaker with a small amount of ice.
  • Whip shake until chilled.
  • Strain over fresh crushed in an old-fashioned glass.
  • Top with more ice to form a cone and garnish with a mint sprig.
  • Drizzle 1/4 oz.
  • Cynar over the top of the cone.
  • Garnish with forest of mint.
