I’ve enjoyed trying a variety of rums in this cocktail. My first take split the base between a blended white rum and an overproof Jamaican white. I eventually settled on a version using Smith & Cross “Navy Strength” rum, so-called because its alcohol content is so high, gunpowder could still ignite if a barrel of rum happens to spill in the hold. This rum is full of funk or “hogo,” a term that stems from the French “haut gout,” which refers to slightly tainted meat or another strong yet desirable flavor.

  • 1 1/2 oz Smith & Cross Jamaican Rum
  • 1 oz Fresh Squeezed Lemon Juice
  • 1 oz Pineapple Syrup
  • 3/4 oz Cynar
  • Combine all in shaker.
  • Add ice and shake for 15 seconds until well diluted.
  • Double-strain into a chilled coupe glass.
  • Garnish with lemon wheel.

Humuhumunukunukuapua’a

Humuhumunukunukuapua’a is a modern tropical cocktail created around 2014 by bartender Marcovaldo Dionysos at Smuggler’s Cove in San Francisco. Named after Hawaii’s state fish—the reef triggerfish, The name roughly translates from Hawaiian to “triggerfish with a snout like a pig”—the drink stands out as a rare, gin-based addition to the modern Tiki revival canon.

  • 1 oz Plantation 3 Stars White Rum
  • 1 oz Rhum Jm Vo Rum Agricole
  • 3/4 oz Fresh Squeezed Lemon Juice
  • 3/4 oz Unsweetened Pineapple Juice
  • 1/2 oz Orgeat
  • 2 dashes Peychaud’s Bitters
  • Add all ingredients to shaker with 8 oz.. crushed ice.
  • Shake briefly and open pour into a double rocks glass.
  • Garnish with a cherry.

Improved Chartreuse Swizzle

The “Swizzle” is a whole class of cocktails named after the stick of the same name. The original swizzle sticks were created in the 18th century at a rum plantation in the West Indies using the branch of the Quararibea Turbinata (also known as the “swizzle stick tree”). This recipe is a fine example of the genre. Found on the KaiserPenguin.com website (is there a better drink blog name than that?), the recipe is amped up by the inclusion of jet fuel J. Wray & Nephew overproof rum.

Improved Chartreuse Swizzle

  • 1 1/2 oz Green Chartreuse
  • 1/4 oz Jamaican Rum J. Wray & Nephew Overproof
  • 3/4 oz Fresh Squeezed Lime Juice
  • 1 oz Pineapple Juice
  • 1/2 oz John D. Taylor Velvet Falernum
  • Combine all ingredients in shaker and add a half-handful of crushed ice.
  • Whip shake well for 10-15 seconds or until ice is mostly dissolved, then strain over fresh crushed ice in a 16-oz. pilsner.
  • Then top with more ice, swizzle till outside of glass frosts over then garnish with lightly-slapped mint and an abundance of grated nutmeg.
  • Serve with a straw nestled beside that fragrant mint.

Improved Japanese Cocktail

This is a twist on the Japanese Cocktail that dates back to the mid-1860s. Cocktail historian David Wondrich (author of books Imbibe! and Punch) suggests that the name of the original stemmed from the frequent visits to Jerry Thomas’s bar by a member of Japan’s first diplomatic mission to America. The key “improvement” here comes by way of the addition of Fresh Squeezed Lemon Juice and Peychaud’s bitters.

  • 2 oz Pierre Ferrand Ambre Cognac
  • 1 oz Fresh Squeezed Lemon Juice
  • 1 oz Orgeat Syrup
  • 3 dashes Peychaud’s Bitters
  • Stir ingredients over ice, then pour over a large rock in a double old-fashioned glass.
  • Express twists and garnish.
