Gomme or gum syrup is simple syrup with the addition of gum acacia. You’ll find food-quality gum acacia on Amazon It creates an amazing mouthfeel and transforms your Old-fashioned into something amazing.

  • 2 oz Gum Arabic gum Acacia
  • 6 oz Water
  • 12 oz Superfine Sugar
  • Amounts are important here, so measure carefully.
  • In a small plastic container, combine gum arabic and 2 oz./60 ml of the water.
  • Stir with a chopstick to blend, cover, and let sit for 48 hours, or until the gum arabic is completely absorbed by the water.
  • After 24 hours, combine sugar and remaining water in a small pan, heating gently until sugar begins to dissolve.
  • Then add the gum arabic mixture.
  • Immediately remove from heat, allow to cool then bottle.
  • Store in the fridge indefinitely.

Grenadine

  • 16 oz Pom 100% Pomegranate Juice
  • 16 oz White Sugar
  • 2 oz Pomegranate Molasses
  • 1 tsp Orange Blossom Water
  • heat juice gently, just until warm anough to dissolve the sugar.
  • Add sugar, pomegranate molasses and whisk till combined.
  • Remove from heat, allow to cool slightly, and add orange blossom water.
  • Allow to cool and bottle.
  • Last up to a few weeks in the fridge.

This equal-parts variant created in the late 2010s, stems from the Prohibition-era Last Word and even more directly from Sam Ross’ Paper Plane invented a few years earlier. The key difference here is the introduction of a spicy Ancho Reyes liqour.

  • 3/4 oz Fresh Squeezed Lemon Juice
  • 3/4 oz Aperol
  • 3/4 oz Ancho Reyes
  • Place ingredients in shaking tin, add ice, shake for 15 seconds.
  • Double-strain into a chilled coupe glass.
  • Garnish with lemon twist.

Hamantaschen

This drink’s name comes from a classic baked Purim treat recalling the 3-cornered hat worn by Haman. A hamantaschen is a jelly-filled pastry, and here we use sweet jelly to bring balance to this gin sour. Inspired by Sasha Petraske’s Cosmonaut.

  • 2 oz London Dry Gin
  • 3/4 oz Fresh Squeezed Lemon Juice
  • 1 tsp Berry Preserves
  • 7 Fresh Berries
  • Combine the gin, Fresh Squeezed Lemon Juice, preserves, four of the berries and preserves in your shaker.
  • Fill with ice and shake vigorously until frosty.
  • Strain into an old-fashioned glass over fresh ice.
  • Garnish with the additional berries.
  • Enjoy a hamantaschen chaser on the side
