
I keep a 750ml bottle of this in my fridge at all times. Great for your morning coffee, and required in many, many different cocktails. In a pinch, if I don’t have some on hand, throw equal parts sugar and warm water in a cocktail shaker or mason jar and shaking the heck out of it to dissolve all the sugar.

- 1 part Sugar
- 1 part Water
Method
- My recipes calling for “simple syrup” refer to a 1:1 dilution.
- 2:1 syrup (sometimes called rich simple syrup) means 2 parts sugar to 1 part water.
- Rich syrup also has a longer shelf life.
- Combine ingredients in a pot and heat gently until sugar is dissolved.
- Do not boil.
- Allow to cool, then bottle.
- You can vary the sugar type – demerara, raw cane, brown, etc.
- 1:1 syrup needs to be refrigerated, and will last a few weeks.
