Penultimate Word

Quarantine Cocktails

In 2009, Matthew Hupert (online as Chowhound user Thew) built an early variation of the Last Word by swapping out the herbal Green Chartreuse for Aperol and adjusting the citrus to lemon. Dan Chadwick later named it the “Penultimate Word” as a play on its famous predecessor.

Pete’s Word

Quarantine Cocktails

Pete’s Word is another of many equal-parts cocktails. This was created by Phil Ward around 2008 while he was working at Death & Co. in NYC. Based on the Last Word, here he swaps in smoky peated scotch, nutty Luxardo and lime. Not the first thing you think would otherwise work with smoky scotch, here – it just works.

Spiced Pear Old-fashioned

I’ve used St. George Spirits products elsewhere in this book, and their spiced pear liqueur is the perfect Fall-to-Winter addition to your bar. This is an old-fashioned variant that ups the pear factor with my homemade pear syrup. Here you can also practice your flamed twist technique!

  • 2 oz Bourbon Whiskey
  • 3/4 oz St. George Spiced Pear Liqueur
  • 1 tsp Pear Syrup
  • 4 dashes Angostura Bitters
  • Combine all ingredients in shaker.
  • Add ice and shake 10-15 seconds, double-strain over a big rock in a chilled old-fashioned glass.
  • Flame twist over glass, drop in.

Who knew whiskey could go tiki? This drink follows a common tiki theme, using an almond syrup known as orgeat (see recipe, We use the “whip shake” technique here, shaking with a small amount of crushed ice, an ideal technique for strong drinks served over crushed ice to minimize overdilution.

  • 2 oz Rye Whiskey
  • 1 oz Pineapple Juice
  • 3/4 oz Fresh Squeezed Lemon Juice
  • 3/4 oz Orgeat
  • 3/4 oz Pineapple Syrup
  • 2 dashes Peychaud’s Bitters
  • Combine all the ingredients in shaker.
  • Whip shake until the sound of the ice in your shaker is gone.
  • Strain over crushed ice in a double old- fashioned glass.
