The Apple Bee

This is one of several holiday-theme original/adapted drinks I’ve created over the last 18 months. On Rosh Hashanah, the Jewish New Year, we traditionally enjoy apples and honey with a prayer for a “sweet new year”. I created the Apple Bee by drawing on a cocktail known as the Golden Delicious. I’ve made this a little less booz.y and increased the apple flavor profile by muddling apples and swapping out higher-proof applejack with apple brandy for a smoother taste. My first iteration of the drink used Barenjager honey liqueur which tasted artificial. Honey- sweetened Benedictine provides a more nuanced and herbal profile and makes for a much better drink.

  • 2 oz Clear Creek Reserve 8-Year Apple Brandy
  • 3/4 oz Fresh Squeezed Lemon Juice
  • 3/4 oz Benedictine
  • 1/4 oz Honey Syrup 3 Parts Honey to 1 Part Water
  • 1/4 Honeycrisp or Similar Apple
  • Roughly chop the apple and place in the bottom of shaking tin.
  • Muddle apple well to release juices.
  • Add remaining ingredients to tin, add ice and shake until well chilled, about 15 seconds.
  • Double strain over a large rock in a double old-fashioned glass and garnish.

The Ticonderoga Cup

One of my favorite restaurants here in Atlanta is a little place tucked inside the popular Krog Street Market in Atlanta’s Old Fourth Ward — the Ticonderoga Club. Founded by Regan Smith and Greg Best, Greg single-handedly launched Atlanta’s cocktail renaissance in 2014 running the bar at Holeman & Finch. This take on the julep is their namesake drink and features pineapple syrup, sherry, and aged rum. Try it – I promise you will love it.

  • 1 1/2 oz English-Style Rum
  • 1 oz Cognac
  • 1/2 oz Oloroso Sherry
  • 1/2 oz Fresh Squeezed Lemon Juice
  • 1/2 oz Golden Pineapple Syrup
  • Build in a shaker tin over ice.
  • Shake and serve in a mug of your choice.
  • Garnish with a forest of mint.

Here’s a modern update to a classic cocktail. Found in the The PDT Cocktail Book, this is based on an earlier drink, the Velvet Glove. Updated proportions & Champagne make for an even better formula.

  • 1 oz Pierre Ferrand 1840 Cognac
  • 1/2 oz Lillet Blanc or Cocchi Americano
  • 1/2 oz Marie Brizard White Crème de Cacao
  • Champagne or Other Dry Sparkling Wine
  • Combine all ingredients but Champagne in your cocktail shaker, add ice and shake for 15 seconds until well diluted.
  • Double-strain into a chilled coupe, top with bubbly.

  • 1/2 oz Pineapple Syrup
  • 1 tsp Yellow Chartreuse
  • 1 tsp Maraschino Liqueur
  • Add all ingredients to shaker.
  • Add ice, shake about 15 seconds.
  • Double strain into a chilled coupe.
  • Express twist and garnish.
